One of our rad regulars, @garretthanson_photography offered to collaborate on a photo project. We sent them the following recipe for V60, and got this stellar photo journal back. Give Garett a follow and let us know how this recipe works for you! ☕️✨💕 :: 1. Boil Water 2. Weigh out 20 grams of coffee 3. Grind medium/fine 4. Pre wet the filter with hot water. Discard water or use it to warm your cup. Add the coffee and settle the grounds with a gentle shake. I like to smell the grounds before I brew and get a preview of what you’ll taste later. 5. Start a timer and pour slowly, starting in the center, and work your way to the outside edge using as little water as possible to wet all the grounds. Roughly 50 grams of water. 6. At 45 seconds slowly pour water from the center to the outside edge. This should bring the weight up to roughly 100 grams. 7. If the slurry bed sinks below the coffee grounds, or leaves any grounds above the water line, hit it with some water to keep all the grounds brewing in the slurry. 8. At 1:30 start slowing adding water in concentric circles starting from the center like before. Bring the weight up to 314 grams by 2min. 9. Brew should finish at 3min. If it doesn’t, try adjusting the grind finer to slow things down or courser to speed up the flow of water through the brew bed. 10. Enjoy!

Food science experiment number 5 or 6? Can’t remember how many of these nutella tests I’ve done. I started with a base recipe for chocolate hazelnut butter from @cannellevanille (via her latest cookbook) and have been modifying it for single-origin chocolate and larger-scale production. Here you see two batches, the one on the left done first, the other still warm, fresh from the mélangeur. See the little modules in the first batch? The second batch also developed those after sitting for a few days. We think they occur because we don’t use emulsifiers in any of our products (additives like carrageenan and lecithins that bind solids to fats): the modules are little lumps of cacao and hazelnut solids separated from the cocoa butter and nut fats. Will and I, disappointed by this at first, now kinda like the unique little soft crunch they add. Why don’t we use emulsifiers, you ask? Because emulsifiers mess with your gut biome (see link in bio). I also find they sometimes leave a weird mouthfeel: another unnecessary ingredient added to the label. Simple food is the best food!
